We typically tap thirty to forty trees when we collect maple sap at our rental cabin in Brainerd MN. The sap runs best when the temperatures first start to fluctuate in late March. The more dramatic the temperatures swing, the better the maple sap runs. Some days the buckets have to be emptied twice at our Brainerd cabin rental. The sap is then stored in large containers out of the sun until there is enough to evaporate. The raw sap is then reduced by boiling it down in a large stainless steel pan. Nothing is more relaxing than sitting around the fire at our Brainerd Lakes rental cabin, visiting, laughing, and stoking the fire while the sweet sap boils down into pure maple syrup.
